Cheez-It Crusted Pollock Fillets

Pollock fillets, dipped in crushed Whole Grain Cheez-Its and grated Parmesan. A fun dish that packs in bold cheese flavor and is sure to please even the pickiest of eaters.

Serves: 100

  • 17 whole eggs
  • 4 1/4 cups 2% milk
  • 100 4oz pollock fillet portions
  • 6 1/4 crushed, whole grain cheez-it crackers
  • 7 tablespoons grated parmesan


    1. Preheat oven to 350˚F
    2. Combine eggs and milk
    3. Place fish in egg and milk mixture
    4. Dredge fish into crushed whole grain cheez-it crackers
    5. Sprinkle fish with parmesan
    6. Place on parchment lined pan and into oven
    7. Bake 20 minutes or until internal temperature reaches 145˚F for 15 seconds
