Ingredients:
Yellow Potatoes, Large | 20-24 |
Aji Amarillo Paste (Peruvian yellow chili pepper) | 1 CUP |
Lime Juice | 1/2 CUPS |
Mayonnaise | 2 CUPS |

- Boil and mash the potatoes.
- Mix with the chili paste, lime juice, mayonnaise and salt and papper to taste to create a spicy potato mixture.
- Fore each serving spoon 1/8 of the potato mixture onto a plate.
- Place 4 cooked chopped Tyson Red Label®Crispy Chicken Tenderloins ton top of the potato layer.
- Add another layer of 1/8 of the potato mixture on top of the chicken.
- Garnish with avocado slices and cilantro leaves.
